Normal people enjoy creating a culture for and giving characteristics to an area because it makes it seem extra special and cool. Carne Asada fries, NY pizza, hummus, whatever it is literally just a combination of ingredients that can be found anywhere prepared a specific way, but picking that food to associate with the area gives them a little symbol, kind of like a national sport or a flag.
