Why is this such a universal fantasy? I used to do it when I was younger and was listening to music while I drove but now I'm 26, don't give a fuck about people from high school, and listen to NPR in my car.

Probably because this place is mostly late teens-20 somethings that grew up with the Goofy Movie, where Max got his crush gushing wet for preforming a pop song in front of the entire school.
I knew a kid who did this in 7th grade and it was horrible his voice was cracking going up and down octaves and stuff but he was a dick so I enjoyed it

Not really. There's just something really energy-releasing about these fantasies. I get them all the time when I'm manic, like beating up my school bully who wasn't even really a bully just someone I didn't like or imagining yourself fighting off the school shooter as he barges in or imagining living through an entire war in your original fantasy world.

Because of media depiction. You'll have seen it on various talent shows, where the shy, ugly, kid has this amazing voice and is suddenly accepted. Stuff like Susan Boyle. It's on Youtube too stuff like Greyson Chance and as mentioned in the thread in stuff like movies like a Goofy Movie. It's the idea of being this loser with this hidden talent, suddenly showing off that talent, everyone being surprised and gaining acceptance.
