So a friend just gifted me EUIV. I've played Victoria 2 before and a little bit of CK2, but I mostly play Civ and Total War.

It's far more easier to learn than Vic II, you'll manage. Economy is simpler, no pops.
Play some major nation for your first playthrough. I think Castille is the best choice, as you have to colonize and participate in European politics at the same time.
Most important DLCs are Common Sense, Art of War and The Cossacks, but wait for a sale and buy them all. Most of them add flavour and features to specific religions or regions, so it's dependent on which countries you're going to play.
