Read the book Guitar Zero. The author is a cognitive neuroscientist who learns guitar from scratch at 39. It talks a lot about how adult brains can still learn complex skills, it just takes different learning strategies and a bit more time. His studies on humans, mice, and owls have shown this as well. Adult brains learn slower, but don't have a lower skill cap as is commonly believed.
