Yeah, could have just been the bottle. I've had this happen before, with various hot sauces, either get an unusually hot as fuck bottle or a weak as fuck one. Even with QA it all boils down to the crop.

I like to test my sauces by putting multiple drops directly onto a potato or tortilla chip and repeating until I'm either out of chips or I have to stop. Sauce like Tabasco are tricky. If you have a little, it's not very hot. But if you have a lot, the vinegar cuts deep like a bitch.
I'm not a fan of Sriracha or other unique flavor sauces. I like simple purees that taste and feel like you're licking the sharp side of an old pocket knife. Pain 100% is my favorite.
