Also provolone, mozzarella, and brie are very good.

Cheddar is a good starting cheese. Maybe if you like it enough you could venture out and try some swiss. Sounds pretty crazy, I know, but it takes time to acquire the taste.

Feta is great crumbled. It's also good mixed with cottage cheese in an omelette. Very healthy stuff actually. Provided you have it in moderation.

Feta's too salty to eat by itself. That's more for salad toppings.

Cottage cheese is pretty good. Very mild and you can mix it with other flavors. You can also get those sampler packs they have in some grocery markets. Just make sure to get the ones with real cheese in them. Some of them taste like wax for some reason.
