Self-pity aside, I considered the possibility that she may have been anxious and felt pressured and that was the reason she stopped responding. She mentioned going to therapy for her anxieties before so I thought about addressing that as a last effort sort of thing.

It's good that you're keeping an open mind to her being too anxious to maintain contact. It's likely that she ghosted you because she's selfish and doesn't care about your wellbeing, but if she did it out of anxiety or self-loathing, you've offered her forgiveness, but if she doesn't respond, she was either behaving selfishly to begin with or isn't emotionally well enough to maintain any sort of relationship.
