Well, I think mushrooms are there because the original Anon liked them. You can try taking them out and replacing them with something else you'd like.
here is my meal routine (for 15 years now)
oatmeal - a huge spoon of honey - and a banana mixed toguether
turkey sandwhich with iceberg salad and a salad of cocumber
pasta with comercial tomato sauce or frozen pizza

I'm not a /fit/ specialist, but I know that mushrooms contain protein and that protein is good for gains. You might want to look that up. While you're at that, you might want to look up other vegetables that have high protein and low carbohydrate content, so you can replace the mushrooms with something "compatible".
