Hunter x Hunter (2011) is probably what you're looking for. Its a generic-but-comfy shonen for the first 20 episodes but it becomes much more than that for the remaining 120ish episodes.

I intensely enjoyed Code Geass and Attack on Titan. Both have this elusive quality of having lots of content with no filler. Every episode leaves you expecting to see the next, while there is always the shadow of a big climax waiting at the end.

Code Geass especially hits some powerful emotional notes. Sends you into thoughts about how things that happened can never be reversed, how life is a train that lost its breaks, going full steam ahead towards oblivion. And how despite experiencing loss, despite accidentally burning bridges, despite everything the world throws at us, we press on; with bloody faces and fists and heavy breaths, in the face of oblivion, we find comfort in companionship, and laughter, and love.

so yeah, strongly recommend Code Geass.

Akira is a masterpiece. Pretty much anything by Studio Ghibli is good entry tier too. Perhaps Grave of the Fireflies would work out well for you. If not then Princess Mononoke?

I also second Hunter x Hunter as a great anime. As he said, it begins like a regular yet comfy shonen and develops into something more than that.
The 1999 animation has a different flavor to it than the 2011 animation (darker atmosphere in both music and color), and when you eventually do rewatch Hunter X Hunter (and you will), go with the 1999 animation for a different spin.
