Because people don't know textarea boxes can be resized and that the way it looks in the box isn't the same as the way it'll be on the monitor they assume that their post looks properly formatted.
Also, it looks natural when you type it on a phone, but comes out funny when you read it after you post.

For years, people have silently decided on how often line breaks were appropriate, some people have no doubt been self-conscious of whether or not they used too many line breaks in a post, but no one else on 4chan ever seemed to call them out.
Yes, it took this long for 4chan users to become self-aware of this behavior. It is a sign of maturity, and the newfound self-awareness that comes with that.
