A lot of people don't know what they are doing when it first pops and up and click schedule the upgrade. After a bit it will pop up everyday asking what day/time to upgrade. You click cancel upgrade and then later on, the pop up will come back on asking for you to schedule the upgrade. Also, when you open windows update( I use 7) and click other updates, upgrade to win10 will always be check marked. So always uncheck that.

I still use Windows XP, and so far it's been just fine. The problem is the 64bit requirements for most softwares. I don't play video games, so I don't mind not being able to access those, but even softwares like Photoshop or the Google chrome browser both require to have an OS on 64bit. I have Fedora 23 running on my laptop and it's reallyyyy good. You can try a few different distros using their live ISO to get a feel for them, I tried a few including centOS which I heard good things about but there was a few things that annoyed me and performance seemed vastly better on fedora. Fedora is pretty much red hat enterprise beta.

Most of the bugs I've found tended to be non-vital things, so I largely ignored it if it didn't cause an actual issue.

The never-ending shut down bug was a fucking nightmare though. Only thing that fixed it was restoring, but subsequent updates just fucked it up again. Ended up using manual "workarounds" until it finally consistently shut down properly after another update.

If you're comfortable selecting parts for a PC and are willing to try to cheese out something cheap, use Cyberpower. Only website I know of that still lets you choose windows 7 at least for desktops. Hell, they'll even send you a blank HDD now if that's what you want. Used them for maybe 6 years now and the only issue I ever had was them sending me a shit motherboard, but they replaced it for free (aside from money spent obviously to go pick it up again) and everything's fine.

Ubuntu has a 60-70% market share of users and this means it gets alot of attention in regards to programs or "packages". Linux Mint is a flavor of Ubuntu btw.

On Win10 pro and enterprise - i do not know about home.
You can disable everything, and i mean everything.
You can disable Cortana, which MAY be used as a keylogger since it remembers what you type.
You can disable the store and the pre-installed apps. In this case the mail-app, which MAY index your e-mail, but why would you even use that when its shit.
You cant fully disable the telemetry straight, by setting the Telemetry options as 0, which by windows logic means that only minimal telemetry data will be sent to microsoft. However, the minimal data is Microsoft Defender data.
You CAN disable Microsoft defender which MAY index the files on your computer since it scans your files for malware.

and there you go, a secure and private Windows10.

You need to find the service that the popup is tied to and disable that service permanently. It's probably the Windows Update service. If it's not, disable the Windows Update service anyway.

Open your task manager, go to the services tab, then use the button in the bottom-right of the window for administrative access. From the new Window, you can permanently disable services.
