Because they fell for our trick. To pass the real Turing test, you don't just have to convince a human that you're a fellow human (performative), but also be able to establish and maintain your legitimatized status as a human being among as many human beings as you need to in a sustainable way (social).
That's why even the loneliest loner and the most helpless disabled person is still a human being, but a highly capable robot(in labour or converation) isn't. They have neither the will nor the capacity to establish themselves as a member of society in even the most minimal sense.
