cavalry can not beat pikes, pikes are longer because they can rest their mass on the ground
and about the game, ai would randomly use swings and thrusts instead of just using the thrust when the enemy is charging, which is why they arent effective against cavalry

also if you are fighting in the hills, even huscarl infantry can beat the cavalry because horses cant charge uphill fast enough
