How does sociology work? If we're all individuals how can anything ever be inferred about a group?

Go read some of Gustave Le Bon's writings on group psychology.
He asked this same question 100 years ago OP and his answers were deep and insightful. You'll never hear about him today though because facist parties used his studies on group think and group psychology to help create mass movements so even though his studies didn't really have anything to do with that and were just objective observations the establishment tries to cover him up. His writings come from an era before psychology was really codified and corrupted so they're pretty legit.

But any time statistics gets brought up, even in a discussion about a group, people start freaking out and saying it's wrong to generalize or that one can't generalize because everyone's different.
Sociology is a Jewish pseudoscience, Marx literally founded it and it's all about (((critical theory)))
Basically it boils down to this: In your day to day life treat people as individuals because they may or may not be representative of their group but when designing social policy (or thinking about polices such as immigration) look at the reality of group statistics.
