The issue with shared tipping in the US is that it requires BoH to be actively involved with FoH service and vise versa, it's a very complex issue

My BoH staff is great, and they're incredibly hard workers that I'd go to great ends to support, but I don't trust most of them to be in FoH. Mostly they are hard-asses who have grinded their way to where they are, and don't take much shit, that type of short fuse doesn't mix well with FoH.

On the flip side, I wouldn't trust a single one of my FoH in my kitchen, I don't have enough band aids and tissues. Also, I wouldn't trust them to handle the products. When we have people paying 150+ a head, they expect perfection, and I'm not letting unskilled people handle thousands of dollars in protein products and produce

I deal with this by taking a much lower wage than most chefs in my status, and keeping a core kitchen staff that I pay to the best of my ability, so they stay loyal and hard working.

I agree. My mother was a waitress for 20 years and made good money for what she did. I always feel bad not giving a tip because I know that these women have children to feed most of the time. But it's complete and utter horseshit that restaurants expect us to pay for the cost of their labor. It's a byproduct of life from the great depression, where wealthy customers would pay their servers because their employers would stiff them claiming that they didn't have enough money to pay them.

Best way to fuck restaurant owners is to just not eat there if they don't pay their servers a fair wage and expect you to tip, They'll get the hint eventually when they start losing money. If I get shit service, I don't tip. If I get mediocre service, I give shit tip. If someone goes above and beyond for me, serves me well, has a personality that I find endearing, then I will tip that person well.

My mother had the right attitude.
