I know what a paddy wagon is, but from what I know about American etymology, it's never as simple as "it sounds like this so it means this." Like, Bugs Bunny cartoons have a lot of depictions of Irish cops, that would follow suit as easily as having Irish in the back. It's like the meaning of honkey and cracker, or Hoosier, etc. There's always a story behind each colloquium and it's usually about some rednecks saying something silly.
