I used to do the roux base until I saw a TV show with your Heston Blumenthal where he made it a better way:

Reduce 300ml white wine to 30ml
Add 300ml chicken stock & rind of parmesan, simmer for 15-20mins
Grate 80g of cheeses and toss with 1-2tbsp corn starch.
Cook macaroni in same weight of water until just absorbed.
Remove parmesan rind and whisk cheeses into liquid until just emulsified.
Pour sauce onto pasta and mix.

I normally make it a proper meal by tossing through some diced vegetables and chicken or bacon then pouring it into a baking dish and topping with sliced tomato, grated mozzarella and panko then baking until the cheese browns.

I think you'd be generally surprised at how much industrial production techniques have filtered down to small producers. Here in Kent our local brewers are basically using scaled down versions of the same equipment huge licensed breweries use. Even on small dairy farms the level of automation is pretty high.
