Right now in the US you have significant competition for food and staples from traditional shops, grocery stores, walmart and amazon. If you institute a price control that flips some few goods to negative profit, noone will actually notice for awhile, stores will make those products the new loss leaders. In the long run, though, institute broad price controls and flip their slight margin from positive to negative, and they'll all stop selling simultaneously.
