Mountains arent realy spectacular, can visit any of them for local folklore.

As for towns

Wrocław and Kraków for sure. Possibly Warsaw but it suffers from every capitol syndrome.
Stay away from Łódz its shithole, Poznan too.

You can do nice trip around medival castles there are regions when its easy to visit 2-3 per day.

Also depends what you want to do.
