I wondered this too so I watched the video closely and around the 0:55 mark it shows that when you press a key a valve opens and the air from the escapes
my guess is that there is a little paper reed in each tube so when the air goes through it the reed vibrates and produces sound
its pretty cool, I think I'm gonna try making this

I don't think there is a reed in there. Pipe organs don't have reed usually, just like a whistle.
The question i have is : how does he do to maintain the chamber airtight and yet have moving parts ?
