Personally i think perfecting even a simple or intermediate shape provides a certain challenge.
I've seen some folders fold a 100 leg centipede by looking at a few lines

that said, it all depends on personal needs. my fav books are by kasahara and most of his stuff is not terribly complicated.
i hate closed sinks as much as the next guy, but subtlety is even more difficult.
