That's one way: Set the camera up for a moderately long exposure, and hope lightning strikes during that time. Rinse, repeat. Sort after the session, and see what happened.
There are automatic triggers now which can start an exposure the instant lightning strikes, and they can be reasonably good at capturing lightning.

The photography aspect is the setup: Making sure you have good composition and exposure for the rest of the shot. Capturing lightning is a matter of luck, not a matter of excellent timing.

You regulate your exposure with iso and aperture, time does not matter since the flash itself is much brighter than anything you are going to catch in any time period.

then you have to find a compromise between a closed enough aperture that doesn't overexpose the flashes but has a long enough time to get a normally lit long exposure of the landscape.
Normally that is a pretty long time, that's why he has more lightnings in frame at once.
Try shooting long exposures with a non-ttl flash for exercise.
What I did was lowish iso, about f5.6 and many 10sec exposures.
The wide variations of color were achieved with white balance the pink/red one was adjusted for high kelvin of the flashes, the blue one was set to low kelvin for the light polluted clouds/sunset.
