Dust, plus no point. Modular viewfinders weren't popular even in film's day.
The most "pro" today is probably Canon, in terms of system range, build quality in the top tier, and reliability and quality of their professional services. Nikon would be a close second.

The most pro film camera is gonna have to be either the Contax 645 or Mamiya RZ67. If you want to shoot 35mm go for a Nikon F5.

In all seriousness 645 is where I would draw the line. I wouldn't drag an 8x10 to a press conference, but I damn sure wouldn't be caught on anything smaller than 6x7 in a landscape scene.
