I used to have a 5d2 with a bunch of L lenses. I made the switch to Nikon for reasons. But I can't even shoot raw because Nikons own software crashes constantly and my old cs5 versions of ps and lr don't support the new nef.

Pixel peepers are (supposedly) confused by the d500 because it's so close to full frame people are starting to be unsure what the point of the argument is anymore.

I realized years ago I tended towards telephoto side of things so it's kind of foolish to have a full frame when your 16-35 hasn't been out of the bag in months.

That being said, I'm considering selling this and getting a used 5d2 again though. At least I could shoot in raw.

Protip: the D500 wasn't made with landscapes and portraiture in mind, it is a fully bred sports action body.
If you still go for changing body why not try the D700 or D750 instead? Or even the D7200 if you stay with crop. Much nicer all-round bodies.
Or you can just update your PS/LR with that money. And probably buy a nicer lens.

I'm looking into the D7200 with an 18-140 VR lens. Mostly used for profile and nature shots, occasional street photography. Thoughts?

I bought the D7100 and 18-140 a year and a half ago. I recommend the camera (D7200 is a straight upgrade of the D7100) but I found myself a bit limited by the not very sharp and very slow lens at anything other than absolutely optimal light conditions.
I think getting two or three cheap primes would serve you much better.

That kit lens you have on there is the older 18-55 VR which I have read less-than-favorable reviews on. The newer VR II is optically excellent. Minimal color fringes, has a little distortion but what kit lens doesn't.

I'd try some different glass on the front. Even on my lowly D7000 that kit lens can give some of my old L glass a run for it's money. Check out my photo thread up right now a lot of those were done on the 18-55 VR II
