Primes. Sigma 30/1.4, Sony 50/1.8 OSS, Zeiss 12/2.8 if you need to go really wide for landscapes. The 24mm Zeiss suggested above is also good but overpriced as fuck. Sigma's 19/2.8, 30/2.8 and 60/2.8 are also brilliant for the price, although on the slow side.

If you really want an all-purpose lens with some degree of sharpness, get Tamron 18-200 or Sony 18-200 (PZ or non PZ). But they're fairly expensive and are going to be shit at night.

Human reaction time is on the order of 100-200 ms.

Personally I'm not a fan of mirrorless for a variety of reasons, so I recommend the 80D or better yet the 70D.
