The RAW readings from your pleb phone is converted to JPEG using several presets, filters, sharpening and noise reduction. It is already "retouched" only automatic vs full control on a DSLR.
See if you can get a RAW from that camera and compare the results.

Moto G3 user here, "Untouched pic" a shit, HDR on these phones are truly 3 pictures combined (I can even decide the number of bracketing pics for it).
I like how mine handles colors and exposition but no, it's never a pure shot.

That phone does a fairly decent job at HDR for a phone, but it's pretty blurry even at this resolution and the highlights are still clipped.
I long since ditched my DSLR for a mirrorless camera, but the sensor and idea are the same.
