Would a 3 blade brushcutter do the job against a vine patch like in the pic?
Or will it just tangle and screw up the trimmer?

really depends on the vines and your machine. I'd personally just cut that back with a hand hook (it's an asian thing, kinda like a scythe)and some thick gloves. I'd make short work of your pic.

That blade should work, but make sure to keep it sharp. You better have a tourquey enough trimmer. Straight shaft, 1.5 horsepower minimum.
Don't try any hardwood over 0.75" / 15cm without a sawblade. But the sawblades get bound up with tall grass wound around the axle.
For safety, best have a full harness and bicycle handle, eys and ears, boots and chaps. But whatever. Straight shaft, 1.5 hp, sharpen the blade.
Once it's cut, paint the fresh stumps with 28% glyphosphate and they won't return.

I used a brush cutter to clear a lot of land for someone to turn into horse pasture. Mostly Himalayan blackberry like in your pic, but really thick, burly wild roses too. It worked great. Didn't tangle often and once you get the technique down, you can clear a ton of land with that thing quickly.
