Honestly wanna take my first trip outdoors overnight to clear my head. Besides food I wanna build my own shelter and be comfortable. I'm not a hard core prepper or anything but I would love to learn how to be comfortable should need arise.

Anyway, to answer your question: nothing. I don't waste time or effort on a single night out. If I did, I could probably get away with a pretty short list. Knife (one that gets used for more than shitposting pics), lighter, sleep bag, pad, tarp, water, food.

Take everything the anon which you replied to listed. If you're brand new then car camp, set up your site and then practice your shelter building. Try to sleep in it and you can fall back on a tent or your car. Repeat until you are comfortable then hike in to your camp site.
