I was hiking with some friends up a tiny mountain on the NC border the other day and I saw a guy walk by with one of these fuckers hung under each arm.
Not sure if hipster or what, but I can't imagine they make the water taste very good.

I remember seeing them at sports authority and from what I've experienced and can tell you, for the tiny amount of water that they carry, you'd be much better off with a Nalgene or even a Smartwater bottle. both of which would be much more convenient to carry.

But yeah, strangely sturdy. (the ones I have have a mylar outer layer and a clear plastic inside layer, less than 0.5€ each)

Someone gave me a Bota bag for Christmas. I don't drink much, much less in public, so I didn't have much use for mine. It's light weight I guess. But it doesn't hold much water, and when it's full it's kind of weird to carry. It will also sweat/leak by the top. The mouth piece is sort of cork screwed so you shouldn't put your mouth directly on it. It also needs to be washed regularly or it will collect gunk. The water doesn't taste weird until you get to the last couple mouth fulls, then it tastes like plastic because of the liner.
I did find a niche use for mine. I work with animals, so when I go outside I put the pouch under a sweater or coat, sometimes along my back, so the dog doesn't try to play with it like they do with water bottles and thermoses. Out of sight out of mind. Then if I get thirsty I unzip quick and spin it around to drink.

the benefits to this design is that it is isulated and flexible
this allows it to be more rugged if it it falls and also if you land on it while climbing
it also is more convienent to pack with alot of stuff because it can be molded between
