I'm thinking of buying a canvas wall tent and stove and solar panels and live off the grid on my Grandparent's ranch. It'd only cost me $10-15K tops. How would I go about setting up plumbing for showers, cleaning, etc.

Buy a yurt. More livable than a standard tent and in most jurisdictions it is considered to be a temporary structure so it is immune to much of the building code.

Not really. A yurt is supported by the lattice that makes up the wall. A canvas wall tent is a superset that includes yurts and many other tent designs, most of which are post supported. Yurt definitely is not a brand name. It's a particular subtype of tent.
