Is an LPG Sedan a lot safer than a Hatchback Sedan since there is a layer of protection between you and the tank
It might help soften the impact with more crush zone but you'll survive in both. Surviving injury in a rear ending comes down to the seats and restraints.

I don't think an extra sheet of metal will help you bruh

That's not what he's worrying about. He's worrying about driving around with a tank of LPG, which is basically a bomb in a crash.
The US Navy experimented with LP fueled vehicles 20 years ago.
They came to the conclusion, that there was no environmental, or $$$ benefits, only the downside of being extremely unsafe.

A lot of modern sedans do not actually have a fully separated trunk (so you can fold the rear seats to fit something like skis), so you're probably fucked either way.

modern LPG systems are so safe that you're probably safest while sitting on the tank
LPG tanks are safer than petrol tanks actually with the dozen safety valves they have on them. Petrol cars go up in flames all the time, some of them infamously, and LPG cars aren't any worse by the numbers unless you literally live in Brazil or Russia and a monkey has installed your LPG tank.
