Any reason for which I shouldn't go for the cheapest new tyres available for my car?
Is there any real noticeable difference between brands like michelin vs hifly?
I assume some more experienced drivers doing large millage might notice the difference, but would a person just going to work and back and not breaking speed limits ever benefit from more expensive set?

I went with my first set of higher end tires recently. pilot sport 4s

i upgraded from the 'just had new tires fitted' Chinkshit that the previous owner had on them.

I immediately felt the difference. ride felt more comfy and softer. there was no longer a whooshing sound coming for my rear left side. in not sur did I'm just imagining it or if its just placebo but I feel as though there is more of a 'stickiness' to them.

overall I don't think I will be cheaping out on tires anymore.

in fact I'm thinking of putting some nicer ones on my mothers yaris. any recommendations if it it has its stock 15 inch wheels

Alright so more expensive tyres are better, but is there a reason not to cheap out on tyres if you just want your car to get your from A to B.
I might keep my current car for maybe next year or two, so I don't want to spend too much on it.
It is also just my first car so no idea how long tyres last for. I will be doing about 8000 miles a year, mostly on a motorway at 70mph

Tyres from brands you've actually heard of will be softer, quieter at speed, better in the wet and generally have better performance than shitty Chinese tyres.

Tyres are the only thing between you and the road, so don't cheap out on them.

That's not really that fast, there's like 5-6 states in the US with 80mph speed limits, some up to 85 iirc.
