They're both amazing cars, if you really want that extra 0-60 time (along with other sport features) and you have the money to do so then go for the S, if you'd prefer something a little more down to earth the regular turbo is good for you

This is literally the only reason.

I know more than a few exotic and near exotic owners. The regular turbo is a beast that you'll never be able to take anywhere near full advantage of. But if you live in an area where there are likely to be many similar cars, it all comes down to owning the next rung up or even being able to acquire one in the first place. People who track their Porsches are not getting the Turbo S. They are getting the track prepped cars.

If you are in such a position to pick out a new, or near new 911 Turbo, what are you asking us for?

Unless you are tracking it routinely, I feel like the S is just overkill. I also think the turbo is kind of overkill.

Just get a 911. The extra money is just so much for even a surgeon's pay.
