Is there some kind of trick for mounting the thermostat gasket on correctly? I can't get it to stop leaking

This. Take a razor and scrape it all off.
then take the housing, put some fine sandpaper on a glass table, or something very smooth, wet it, and rub the housing unit its all clean.
it needs to be perfectaly smooth surface.
then buy a new gasket, dont reuse.
and dont overtorque.

once you get it clean and shiny spray the new gasket down with WD-40 so it doesn't stick like the old one is.
