Corvette handled better and was more reliable.

Vipers came with standard DODGE reliability, were expensive to insure, water pumps seemed to shit the bed regularly, and they had issues with alignment of panels (people said the fucking doors would sag over time, and you'd literally have to lift them up to close them properly [my ex-GF's father had one, he told me about this]).

Not to mention they're R A R E so not a lot of dealerships have someone on hand who can adequately service them. It's a specialty vehicle, you're basically buy a domestic car with import headaches.

Plus they handle like shit and are really no good on or off the track, they just make huge burnouts. There are a dozen better cars to own for the same money, including a Corvette or a Shelby Mustang.

The viper was two things, an american middle finger to the automotive world and a goliath slayer.
If you go around constantly giving people the middle finger, nobody cared. The viper lost its "holy shit" factor.
As far as goliath slaying, in ACR form it still outperformed cars costing 10 times as much, but the gap narrowed. This combined with FIATs performance limits and lack of gt2 funding kind of limited the car. The engine, as it is, can easily put out 800hp.
