Generally speaking, regarding the drivetrain, what is the biggest concern when buying a vehicle with 150k+ miles? If you found your dream car at the perfect price, but it had 200k miles on it, how would you approach rebuilding the engine to make it last another 100k?

The B6 is the only one I head people bitching about. Are the chains located in the rear on the other model years? I found a decent deal near me with low mileage and I'm trying to get an idea of what I'm getting myself into. Replacing every single component is looking like it'll run around $5300, but that's buying them all individually. I haven't looked into the kits yet. I'd imagine if I replaced the guides before they broke that I could reasonably get away with not replacing some of the components.

RS4 is fine since it uses slightly different components. I don't trust the S5 either, but the RS5 should be okay.
S6 and RS6 use different engines and I haven't heard complaints about those yet.

I had an audi, it got to125k and completely shit itself and I spent more money keeping it running than it cost me to eventually sell the POS finance my car that I'm still driving today.

That right there is why you're going to fail, hard. Because when I buy a car the price I'm willing to pay is determined by the make, model, condition and mileage. It is impossible for a car to be the perfect price and 50k more miles on it than I'm comfortable with. What you're describing is car that is overpriced for its condition.
