So I've reached about 44k miles on my 2015 GT Mustang, and I'm about to get some engine oil. What oil is gud? I've just used the 5W-20 Motorcraft synth blend like the book says, but would it be worth it to instead use something like Redline, Amsoil or Royal Purple full synthetics?

I run a 2014 V6 and will start using royal purple 5w-20 synthetic. The dealer uses synthetic blend but fuck that. I change my own oil so it's not too pricey.
Full synthetic of what ever brand you think is good.
You may as well ask what religion is best if you're going to ask which oil is best.

The cheapest source of 5 quart jugs of full synthetic oil is at walmart. Full synthetic is better as there is none of the conventional oil in it that oxidizes and changes vicosity. Don't get the oils whose labels say "high mileage" because those contain seal swell. At 44K, your seals should still be tight, so swelling them only wears the tight seals out sooner. Any of the 5W20 major full synth oil brands are good: mobil1, quaker state ultimate durability, pennzoil platinum, Valvoline.

Just fyi: synthetic oil still oxidizes and changes viscosity with oxidation albeit not as quickly as conventional
