What makes a 'wing' a wing and a 'spoiler' a spoiler

A spoiler does not leave the back of the car. It's a turned up lip on the top of the trunk that creates downforce.

What you have pictured is a wing. See how it raises up? See the gap between the top of the trunk and the actual wing itself? Well, that's what makes it a wing.

Spoilers help maintain laminar flow over the body of the car which reduces drag and generally produce some small downforce as a side effect. Wings generate downforce as their primary function and are most effective when they are placed directly in the laminar airstream coming off the car which is why you see them mounted either roughly in line with the roof of the car or off the back of the trunk. They also have the side effect of helping to maintain laminar airflow but they can also be paired with a dedicated spoiler or vortex generators mounted somewhere forward of the wing.

A wing is literally the same in principle as an aeroplane wing only turned upside down so instead of creating lift, it creates downforce.

A spoiler is more of a lip that's used to decrease drag sticking to the back of the car and make it travel through the air more efficiently.

No, these guys are idiots. Anything kind of wing or spoiler that generates downforce necessarily creates drag BY DEFINITION.

They work by generating downforce through disrupting and redirectly the flow of air around the car. This means that the air isn't flowing smoothly around the car, which means that now there is additional drag.

One important thing is that a wing can act as spoilers as well doing its wing thing. In fact, it's almost inevitable unless it's really high off the car's body AND doesn't have any "spoiling" details like a lip along the rear edge. That's why many OEM wings improve mileage - because in addition to creating downforce by acting as an aerofoil, they also reduce drag by changing the body's shape. They also create drag, so they have to be a pretty effective spoiler to have a net reduction. (But that's easy to achieve because the average road car is not designed to prioritize aerodynamics.)

But if that's too complicated: a wing allows airflow above and below it.

Yes, in two ways: it could have a lip on the trailing edge which causes turbulence along the car's rear, or the wing's presence could have a spoiler effect because it effectively raises the rear of the car as far as airflow is concerned. Air flowing over the roof then over the spoiler doesn't have to turn downward as much as air flowing over the roof then over the trunklid.
