These can be any 7 cars from 1956 forward that were not also produced/designed during or prior to 1955.
Easy Difficulty: Christian Von Koenigsegg is going with you to help you re-engineer the vehicles as you see fit.
Medium Difficulty: You can strip away all emissions and safety equipment. You can also redo the vehicles to deal with leaded gas/higher sulfur diesel.
Hard Difficulty: You can only redo them to not fuck themselves with leaded gas/higher sulfur diesel.
Legendary Difficulty: Nothing is changed about the vehicle.
Just assume you can get the raw materials (including alloys and polymers that didn't yet exist), and have the factories/workers to make your cars.
If you succeed (make a profit and survive for 10 years at least) you get a Fierro with a body kit (pic related).
