Is there a type of power inverter that is auto on/off? I would like to wire something up permeantly so I don't have to keep plugging it in and out.

But then it will run whenever the car is on. And I have a newer Ford escape and they don't really have the traditional ACC wire. I know because I installed a dash cam and looked for the ACC wire

Find an accessory (like the stereo) and splice into the switch wire that actuates it. Take it to the trigger input on a relay that's big enough to run the amperage the inverter requires. Done.

This might be a little to advanced for a total rookie in electronics but you can make it turn on or off using the ignition signal with an N-channel MOSFET.
Cut in half the negative cable of the inverter that goes in the cigarette ligheter and solder the MOSFET drain pin to the bit going off the inverter and source pin to the other bit going to GND. Do some wiring and connect the ignition signal to the gate and voilĂ !
Make sure you use a power-MOSFET and well insulate-case everything.
Pro-tip: put some very high resistance (1Mohm) across the gate and source to allow the gate to discharge faster.
