Your bike is not tuned for higher octane fuel so its anti knock adcantages are not realized. The bike simply is not going to advance timing enough on its own to take advantage of the resistance to detonation.
Your bike has to be tuned for it.

Fun fact E85 has rediculosuly good knock resistance but requires around 30% more fuel to make equivelent power as the same motor on regular petrol.

I bought a Schuberth E1,

Haven't ridden with it yet, but tried it on for a bit longer at home. It does push on my forehead a bit and I don't think the integrated sunvisor is big enough...

Considering to return it and get a GT-AIR

Anyone had similar experiences with Schuberth helmets, or anyone that can try to convince me to keep it?

First off dont just downshift and let go of the clutch. You need to keep the gas open and try to rev-match.

after that you slowly let go of the throttle and engine-brake.

alternatively pull the clutch, downshift and brake till standstill then go into neutral.

That's a weird deal. Odds are the bike will need to be gone through fully after sitting for 10 years. If it has carbs, they will need to be cleaned, battery is probably fucked if it hasn't been replaced, tires are dry rotted to shit and the fuel lines are probably not in the best shape. If it has had all those done, it might be worth 2500.
