What ever happened to interiors having indented sections to place

Why does that stop them from adding a dip up on the top of the dash like many older cars used to have?

Even on that Ranger interior, the airbag could have been between the passenger air vents.

Not exactly.

On a Ford Ranger you could set a map or book or something above the dash itself as well, between that slope and the windshield. The Honda Fit just has a tiny shelf above the glove compartment.

Some other cars and trucks I've been in had rectangle indentions on the top of the dash to set things. I don't see those anymore, and the Fit doesn't have them either.
