Probably a Lincoln or Cadillac. Swap something reliable and just cruise it. Cars from the 60s are never going to be fast with just an engine swap, just dangerous.
I would still love to do an old Trans Am or something where they completely rebuild them with modern suspensions. Falken has posted some cool ones.

Are early 70's cars gud too? because in that case I'd choose an RX-2 coupe or wagon with a built NA FD engine. An original Cosmo would be nice too but I prefer the chibi-muscle styling of the RX-2 and RX-3

Can't say I would swap any new engine wise into it.
Probably use the factory Studebaker V8 and add a single turbo charger to it, fuel injection, 4spd gearbox with one of them gear vendors overdrive units.

1961 or '62 Pontiac Tempest with corresponding Buick Special body panels. It had IRS and a transaxle (earlier than the Corvette), and the relatively modern Rover/Land Rover/TVR V8 is an evolution of the short lived optional Buick 215 (aluminium also earlier than the Corvette) and should more or less bolt right in. It's also no bigger than a modern Mustang and weighs in at 2800 to just under 3000 lbs. 350 whp in a 3000 lbs car would be NEAT.
Might deserve a bump.

It would be hard to make it look good. It wouldn't be too bad if you got some welding and fabricating skills and a lot of time and money.
A guy in my neighborhood has a Corv8. It's pretty much just a big 'ol V8 in the back seat with a roll cage. It looks rough but badass.
