My car manual says to service my 2016 sonata hybird at 7500 miles... And I forgot to do it and now I'm at 8200 miles. So I'm 700 miles late. Will this negatively affect my car being this late? I'm scared shitless

I work at Jiffy Lube and many people come in 10s of thousands of miles overdue and somehow their shitboxes still run.
700 miles is nothing, if anything you could go another 1000 before seeing any major sludge in your engine.
Just stay on top of your service intervals and you'll be fine.

Don't forget the undercoating
Have the fine chaps put in synthetic 0w30 (0w20 if youre in a cold area) and do oil changes every 5k or 6 months from now.

Or you can service it at 7000 miles instead of waiting to 7500. Since it's a 2016, this must be your first oil change. I normally get my oil changes outside of the dealer because they charge far less for branded full synthetic oil.
You should check your oil dipstick once in a while instead of waiting for these "7500" intervals.
