Very few didn't have bench seats available, only one I can think of off the top of my head is the 1st gen Charger/Marlin which also had buckets in the back

Some 70's are pretty cool looking. And if you do want power a newer Hemi/LS/Windsor swap is literally 1 day and a case of beer.
You can also do a modern 4banger (Subaru boxer, Toyota, and Ford/Mazda engines are good choices here, just find one in an FR layout) swap for easy if you want some economy.

Why do you want a bench seat?

If it's for fucking, you should know car sex is incredibly uncomfortable and you will have way less fun than you think you're going to have. Exception: pickup truck cabs with bench seats. Just enough room and angle for proper leverage, still not fun though. And I'm only 6'2".

Depends. My non-SS 84 Monte has bench seats. Comfy as fuck.

You can get most any non Hemi Mopar made for that money barring a few specific examples. Look at a Dodge Coronet 500 with at minimum a 383 in it. For a tad less, you can get a Plymouth Belvedere and it is the same underneath. For maximum stealth, you could go full size (Monaco, Fury, any Chrysler) and you are nearly granted a bench seat and a big block V8.
