In all honesty, if she pulled over and stopped driving as soon as she noticed the steam or that the car was getting hot it'll probably be ok. Just fill it back up and go thrash it around the block for a while to see if it's alright

What are some signs that it's fucked? Will there be a distinct noise or smoke from the exhaust? Apparently the engine block looks fine from the outside so I don't have much to go on.

White smoke from exhaust, overheating, etc. can all be a sign of something wrong.

Not a clue. A quick Google search would probably yield the answer to any specifics like that. Just go drive it for a while tomorrow, just stay close by so it's easy to push back if something goes wrong and it is cooked. Check all her other hoses first though, if one went, who knows what the other are like. Astra owners never maintain their cars
