Me and the wife won a small lottery and are using it to pay off debt. We figure we'll have maybe 40k or so to buy a new van/suvsuv/truck.
We need something that's safe since we have two infants.
Preferably something that's comfortable and has space since I also have a JK wrangler in which we cram ourselves in to go off road and camp.

Seriously I crashed and totalled my one man camper van astro project today, not at fault, but I'm in a no fault state so doesn't even matter.
Shit sucks.
Don't ever buy new. Buy off-lease if you absolutely must have a car with a warranty. Cars made in the last five years all have off-the-charts safety ratings so mainly just buy something at a good price (like half of that budget or less) that you enjoy and hold back the remainder of your budget for maintenance. In five years a $20,000 car that's had $10,000 put into maintenance will be in far better shape than a $40,000 car that's had no maintenance.

are you set on a van/suv/truck? check out the 2013+ Toyota Avalons. Acres of interior room, high crash test ratings and supremely comfy to drive. My brother bought a 2015 recently and that thing is fucking NICE
