I agree with the guardrail edge example and you could even hit the corner of a building in an old school downtown area but your "barely head on" example is both more common and (I believe) not well represented by this test as both cars spin out some momentum from the other (and the truck has a lot more being heavier). Airbags are triggered by a decelerometer that needs some pretty sudden violence to set them off. So if you hit a sheep, leave the road, and hit a tree, they trigger on the second hit and not the first. Plenty of cars have been in rollovers and not triggered front airbags, and that's by design

I was in the passenger seat. The truck plowed through a commercial sign, then stuck a concrete pylon.

That's because you didn't hit anything hard enough to trigger them, you retard. Cars aren't like the movies where you tap the bumper and they deploy -- accelerometers measure the impact and deploy the airbags only if you're crashing hard enough that the seatbelts aren't enough. That's why they're a Supplemental Restraint System.

They'd do you more harm than good in that collision, plus adding a couple grand to your repair bill.

And I don't drive anything that's got a ram's head badge on it.

They don't have to, you shouldn't have to operate under the assumption that if somebody crashes into you hard enough, you're probably going to be dead, especially at the prices that new ones go for these days. A used Chevy S10 being a death trap is more forgivable because you know what you're getting in to, whereas salesmen probably pitch the muh safety and durability to people about these trucks all day long
