My dad's '96 Passat is easy as fuck to work on, and any Golf up to the Mk3 should be similar or easier.
Look for one that's been maintained well though, German cars respond a lot worse to neglect than Japanese or American cars.

Or find a Volvo. Super safe, easy to work on, and the 200/700/900 series are RWD for maximum hektik skidz. Or go for the 850/1st gen V70, for that T5 sound.
