Because there is a much bigger market for cheap roadsters than there is for cheap, light, nimble coupes. If the MX-5 hadn't been a convertible, they wouldn't have sold nearly as many of them.

As for Miata-like coupes, I guess Nissan S-chassis, AE86 Corollas and E30s are Miata-like in some ways. No way you'll find one for Miata money, though.
